| A Perfect Pairing |
Apr 14, 2008 10:57 pm Mood: eager, 500 Views |  | You know, you just absolutely know when you have paired the perfect wine to the dish. The options may seem endless, unless the dish happens to be ridiculously unique & demanding, then it may take some extensive searching. Certainly there is an array of "interesting" options... those which make your tastebuds jolt & wonder just what the hell is going on, but hey...it's interesting & fun, so why not? Often times, one of the two is ascerbic, or overpowering, or one may be shy, or too sweet, or aloof. But on those oh-so-rare occasions, when Someone has truly put forth thought & effort on just how harmoniously these two substances will interact chemically, texturally, aromatically and of course, tastefully...well, it is nothing short of a perfect reason to believe in God, when considering the odds. It is most definitely worth the wait, all the other experimenting... when you know, beyond a shadow of a doubt, that you have made the perfect match.
To sum it up, The Taste was incredible and the pairing.....stellar. I'm going back for more. |

| Adversity Builds Character |

Do you know that the most interesting wines are produced from grapes which come from vines whose roots must struggle through rocks and Godforsaken earth in search of nutrients? It's true. The roots must work so hard in their search, that they become strong, picking up a variety of tasty experiences along the way. It's why I love Italian wines so, because the grapes have been cultivated there for centuries, stripping the soil of surface nutrients, thereby producing exceptionally complex and delicious nectar. Our big, fat wines of Washington state are spoiled brats which are born of rich and plentiful volcanic soil. Oh, most American palettes love them because here, "big, fat, more" is better. (I'd just as soon pop open a jar of Smucker's jam.) But for true character, integrity, complexity and an inexplicably delightful experience, a discerning seeker will always choose the one who didn't have it so easy coming up. (and if you're lucky like me, you'll be plucked by one who expertly adores some fine ageing as well!) |

It has been uncorked in fact, before even having had a chance to inspect the label, which is by the way attractive enough that I might say I would certainly have given it more than just a glance. The wine itself is young and I would have passed it by if not having been made aware of the fact early on, that it comes from very valuable, deeply rooted, age old vines. It is for this reason that I detect incredible depth and complexity, accompanied by persistent invitations to come closer, breathe deeper, find more.... I have watched it flow into my glass, so rich and vibrant. I took a little whif, swirled and then deeply inhaled. Such promise, such inexplicably intricate notes! There is a delicious and powerful masculinity balanced with elegance and finesse. I go back again and again, each breath revealing a new layer of this complexly magical gift from God. Oh, I am captivated. I swirl some more and smile as the richly viscous drops streak slowly down the curve of my glass, creating such anticipation. My mind reels with the possibilities. How could this wine have such profound structure, such beautiful intensity? I ponder the moment I will take it to my lips, sip it in, roll it opulently around on my tongue. Will it follow through, I wonder? Will all of those fascinating aromas and colors actually be backed by substance? Will it hit upon every thirsting point of my palette, delighting and satisfying? Will it ultimately have a long and persistent finish? I impatiently await the moment of the Taste. | |

| The Simple Truth About Appearances |

It seems to be an eternal debate: Are you shallow if you place importance upon looks and are you spiritually superior if you don't?
I'm sure we've all noticed many times, an extremely good-looking person who has learned to rely only on their beauty to gain the things/people they desire, while the less than beautiful people busily develop their wit, compassion, and sense of humor. On some occasions, an individual is fortunate to have been blessed with both inner & outer beauty.
As for me, I am of the primal species from planet Earth which indeed is first attracted by one's looks. I won't lie about it. Though I can see beauty (or not) in various types, I have a definite type I prefer to get close to, (closer than "just friends") and those types I just really wouldn't care to. Some people prefer blondes, some prefer skinny, some prefer their own sex, some prefer a specific skin color or ethnicity, and that's perfectly acceptable to me. Are these people all shallow and judgemental? No, they're humans! I do believe it would be great if somehow, everyone loved themself enough to take good care of themself and be the best that they could be, inside and out, but I realize that this is a fantasy.
I like to believe there is someone for everyone, and if we all liked the same One, well...we'd be in big trouble, now wouldn't we? Come to think of it, wouldn't you feel best knowing that your your mate was indeed discerning and adored only your "type", specifically you?
Imagine a gigantic garden with thousands of gorgeous flowers, each one identical to the next? We need variety in this world.
I repeat that this is only my opinion, and I hope it doesn't seem shallow. But I am honest. What do you think? | |

How amazing is the man who knows how to speak to female creatures! If the others only knew, words to us are as important as visions are to them. Clearly, the words must be backed by substance, and we do not disregard appearance by any means! But for that rare specimen who has mastered the art of expression, and is able and willing to utter profound, eloquent and true words from his masculine mind to the feminine mind, behold, his world IS an oyster! | |
